			<content:encoded><![CDATA[<p>This is one of the tastiest microwave recipes I know. I based this on general packet mix risottos and experimented with similar ingredients. Most risottos take about 20 &#8211; 25 mins to make, this recipe takes about 15 mins and there&#8217;s no standing over the stove to make sure you&#8217;re not burning anything.</p>
<p><strong>Ingredients</strong></p>
<p>1 cup rice (risotto or basmati rice are best)</p>
<p>3 cups hot water</p>
<p>5 level teaspoons stock powder (I use a green vegetable stock but any stock powder is good)</p>
<p>75g butter</p>
<p>1/2 tsp salt</p>
<p>&nbsp;</p>
<p><strong>Method</strong></p>
<p>Place all ingredients in a large microwave safe bowl</p>
<p>Stir Ingredients</p>
<p>Microwave for 8 minutes</p>
<p>Carefully remove with oven mits and stir</p>
<p>Microwave for 7 more minutes</p>
<p>Stir and let sit for 3 &#8211; 4 mintues.</p>
<p>&nbsp;</p>
<p>Serves 2 -3 people depending on how fat they are.</p>
<p><strong>TIP: Try not to substitute the butter unless you need to, it&#8217;s the key ingredient that makes this recipe delicious.</strong></p>
