Easy Microwave Risotto

This is one of the tastiest microwave recipes I know. I based this on general packet mix risottos and experimented with similar ingredients. Most risottos take about 20 – 25 mins to make, this recipe takes about 15 mins and there’s no standing over the stove to make sure you’re not burning anything.
Ingredients
1 cup rice (risotto or basmati rice are best)
3 cups hot water
5 level teaspoons stock powder (I use a green vegetable stock but any stock powder is good)
75g butter
1/2 tsp salt
Method
Place all ingredients in a large microwave safe bowl
Stir Ingredients
Microwave for 8 minutes
Carefully remove with oven mits and stir
Microwave for 7 more minutes
Stir and let sit for 3 – 4 mintues.
Serves 2 -3 people depending on how fat they are.
TIP: Try not to substitute the butter unless you need to, it’s the key ingredient that makes this recipe delicious.
